I think the problem with trying to decide what is 'correct' is that with most things it wll vary according to time, place, social class, level of education, religious persuasion (or lack of) and any other number of things.
As to Scots / Scotch, I was always taught that a product could be Scotch (whisky, beef etc) but we were Scots. But in other times Scotch was clearly used to describe the people. To say that it is incorrect is simply applying our values/prejudices onto another time period.
Was sending children to work at 10 correct?
Were the Highland clearances correct?
