I am trying to find any details of an Elizabeth Clark b.1873 Polmont, I have her on the Polmont 1881 census staying with her grandfather Peter, but can't find her after that.

Is this the record you have for her in 1881 ?
Wallacestone Muir, Polmont, Stirling, Scotland
CLARK Peter Head W 68 M Engineers Labourer Polmont, Stirling,

CLARK Mary Daur U 24 F Engineers Labourers Housekeeper Polmont, Stirling,

CLARK John Grandson 11 M Scholar Polmont, Stirling,

CLARK Elizabeth Grand Daur 8 F Scholar Polmont, Stirling,

ABERCROMBY Elizabeth Grand Daur 2 F Polmont, Stirling,

The IGI has both Eliz. Clark & John Clark as mother Margaret Clark and no Father mentioned. Could their mother have married after 1881 and the children taken her new surname?

I can't find a birth for a Margaret Clark so perhaps the Mary in the census is Margaret.
I can't find who the little Abercromby girl belongs to though - she could be a clue.

Yes this is the right family, Margaret married an Archibald Swan 1878, I have them in the 1881 Slamannan census, and I have them on the 1901 census for Bothwell, but no sign of Elizabeth, John is on this census with his wife Mary.
Margaret was born 1855-1919
Elizabeth Abercrombie was illegitimate, Mary Clarks Daughter, Margarets sister, the father was named as Andrew Abercrombie
