How can I find out if someone owned property in the 1890's, I believe an Andrew Abercrombie owned 'Polmont Sq' and the 'Wallace Tavern' in Stirlingshire, is there any way to check this out?

I would think that 1st port of call should be the valuation roll for that year - it will give who owns these addresses and who the tenant is - if you know what towns the addresses were in they will likely be held at Library HQ for the relevant local authority - either Falkirk or Stirling Councils are most likely.
If you want to get detailed info on the property try the Registers of Scotland on
http://www.ros.gov.uk/
you can order details of the property (which will include street maps etc) and may provide a wealth of info on the buildings concerned. You can order on-line - but there is a cost - I paid about £18 for a search on a single property about a year ago - I got back dozens of pages of info from the sasines registers plus a detailed OS map of the subject. For me it was worth every penny.

I emailed them recently and received a very good response - the kind members of staff dug out some baptism records and kirk session stuff and sent me the details. They also turned the place inside out for photographs and records of licencees during a visit. Might be worth a try, as Ted says, to find out first if you're right in your thinking that they were owned by Andrew Abercrombie before you go any further. Their email address is on their website :
