I'm not sure, and someone may be able to give you more info, but I was not aware of any census data for 1831 for Caithness which would give names. I think some Census data for Ayr and Midlothian exists and has been published, but possibly not for Caithness... ?

As far as I'm aware from some areas I've seen (which was written up in the OPR) the sort of data which was collected was along the lines of "there are x number of males, x number of females, making up x number of families. The principal employment in the area is..... and etc. I'm not at all sure that individual occupations were noted. But I may be wrong...
I'm assuming you have seen the OPR entry for the marriage and it gives no clues?
