looking for a passenger list to nz approx 1884 for my john jess originally from wigtownshire

Not sure where you have looked already? There are passenger lists on both Ancestry and Find My Past and quite a few other ones mentioned here:

hi looked at the lists mentioned in the link on TS but found nothing I know he left his job by 20/06/1884 but no idea from what port or on which ship he travelled as a single man as he married in 1891 otago nz.in 1884 he lived at castle kennedy wigtownshire

What year was he born? Was he born in Wigtownshire?
What was he doing/where was he in 1881?

Is your John Jess a Lighthouse Keeper?

From Wigtown Free Press 28th February, 1901
BIRTHS - JESS, Male - B30/12/1900 - At Park Farm, Palmerston, Otago, on the 30th Dec. the wife of John Jess, lighthouse keeper, Cape Campbell, Blenheim, N.Z. of a son.

If so, go to Archives New Zealand http://www.archway.archives.govt.nz/ and search for JESS KEEPER.

You should get 10 results the earliest being one for 1886 “William Seed, Secretary, Marine Department, Wellington - John Jess - appointed Assistant Keeper on probation at Moko Hinou in place of Keeper Meyer”

At least that means he arrived in NZ before then and maybe there’s more info in the Archives file presumably obtainable somehow.
